Stevia is a shrub and is a genus (types) of about 240 varieties. It belongs to Sunflower (Asteraceae) family. It grows in sub tropical and tropical regions from western North America to South America. A particular variety Stevia Rabaudiana has maximum Glycoside content (sweetness) and therefore is widely grown in many parts of the world. China first grew it commercially and today it provides about 70% of the total stevia supply of the world.

Also commonly known as Sweet Leaf, Honey Leaf or Sugar Leaf, this particular variety of stevia is at the center of all attention – pegged to be the absolute replacement for Sugar and on the contrary, being useful and healthy.

Stevia Rebaudiana contains Glycosides that have sweetness of upto 300 times compared to sugar and carrying ABSOLUTELY no baggage of calories! The extract of Stevia Rebaudiana has four main Glycosides namely: Stevioside, Rebaudioside A, Rebaudioside C and Dulcoside A. Stevioside and Rebaudioside A are the two dominant components and ratio of these two mainly determine the quality of the 'taste'. Incase Stevioside is more than 50%, the taste has a 'liquorice' after-taste. Incase Rebaudioside A content makes up more than 50%, the taste 'improves' with a reduced after-taste. Other minor glycosides which add upto less than 5% of the total Glycoside are: Rebaudioside B, D, E and F, Steviolbioside and Dulcoside B.
